From our Mushroom House we produce our main crops of King Oyster, Lion’s Mane, Shiitake and Grey Oyster Mushrooms and will be introducing the picture perfect Chestnut Mushroom from the United States in early 2020. We also take pride in our ability to grow several other exotic gourmet mushrooms by request due to the unique micro climates we have emulated in our six grows.

We work with Chefs to introduce hard to come by varieties like Espresso Shimeji, Enoki and the health wonders, White and Black Wood Ears..

“The King”

Description

King Oyster mushrooms are the largest cultivated gourmet mushroom that has a thick cylindrical stem and a small-cap. This shape is achieved by limiting light exposure and maintaining high levels of CO2 in the grow house. Under high light/oxygen conditions the caps grow large and stems thin. We found this out the hard way! The white to light cream colored stems can reach twenty centimeters in length and over five centimeters in diameter, with a firm texture that remains even after cooking. The unique shape offers a variety of cutting options like paring into flat “steaks” The caps range from light grey to caramel brown with thin short gills under the cap joining the stem. Cooked King Oyster Mushrooms have a rich umami flavor and is sometimes likened to Abalone. The outstanding shelf life of up to two weeks can be achieved with cold storage in brown paper bags.

Background

Originally from Mediterranean regions of Africa and Europe but not very commonly found growing wild. We grow King Oyster on either Wheat Straw or Master’s Mix (Soybean hulls and hardwood shavings). First cultivated in Japan and China it is hugely popular due to a meat-like texture and seafood flavor. King Oyster is available all year round.
